sometimes randomly while in Seattle i want to sing “over the river and through the woods ” because the scenery reminds me of it. then i remember it is actually “over the river and through the woods to target we go. thats how i felt last night. you can be walking in the neighborhood and all of a sudden you are in the woods and next you are at a shopping center.

So today for lunch, my cousin took me to the International part of town which is not too far from the office.

We went to Uwagimaya (which has a big food court of all types of asian food) and it was awesome. What can I say I went for Chinese since my cousin doesn’t like it and I will probably only have it when I pick it for myself. So, after we got to look through the grocery store and my cousin bought pockys!

We devoured these little snacks! She also bought mochi ice cream …

This is ice cream that is like a pocket in rice flour which is very gooey. At first when you eat this it feels weird, but its yummy. I tried Kona Coffee flavour and my cousin bought mango, so that’s next. Yumm.

I can’t wait to go again and look around Uwajimaya. This is the website : www.uwajimaya.com.

If ever in Seattle, surrounding cities or Beaverton, OR don’t hesitate to stop and look. The one downtown has a bookstore and cooking school! It even has a “Uwajimaya Village.”

so my cousin, a lovely cook, made fried rice this weekend.

I really don’t know too much about cooking but I love to do it. I was excited when I’d heard she’d make fried rice. Turns out it is really easy here’s my version of the recipe :

What you’ll need :

soy sauce

a bag of frozen veggies

an egg or two

& week old or leftover white/sticky rice

What you’ll do:

Get the leftover rice and put in on a medium hot pan, i guess you’d also need a smidge of olive oil. Add your egg (or two haha) and cook for about 5 min. While you are doing this put water to boil. As soon as the water is boiling add the frozen veggies for a few seconds and run them though a strainer and add them to your rice and egg. Continue to fry for about 5/7 minutes more. At the very end add in soy sauce to taste and voila !

You should be able to eye everything because it has to do with how much rice you have in the beginning

So much better than any chinese restaurant !

so a not so new passion I have is shoes

Well since saturdays are typically my night to cook I decided to make some good old burgers

I looked up a recipe for home made buns and i’m hoping they come out well. I hope they are good or that we are able to use them.

As for burgers, I usually get ground beef and add a little bit of an envelope of Lipton Onion Soup mix or fresh cut onions cut very very small. (A trick for cutting onions and not crying, is to soak them in water prior to cutting them.) I also add an egg so they won’t fall apart, a pinch of salt, a pinch of pepper, and a little bit of (spelling) Worchesterchire Sauce. I really love this recipe and it’s so easy.

I’m adding Tillamook cheese to the burgers and boy I wish that I had Whataburger ketchup. Wish me luck because i’m quite novice to cooking. If i’m really in the mood, i’ll cut potatoes and make french fries! Below is the bun recipe:

Homemade Hot Dog or Hamburger Buns

1 cup milk
1/2 cup water
1/4 cup unsalted butter
4 1/2 cups flour (unbleached, whole wheat, or a mix)
1 package instant yeast
1 tablespoons honey
1 1/2 teaspoons salt
1 egg, room temperature

Heat the milk, water, honey and butter until butter is melted. Check temperature. Depending on the temperature, let cool to 120F. Carefully beat in egg.
Mix 2 cups of the flour, yeast, and salt. Mix into the milk mixture. Stir in the rest of the flour, 1/2 cup at a time. Beat well after each addition.
When the dough pulls together, (it will form a soft ball) turn it out onto a floured surface and knead until smooth and elastic. This should take about 5 minutes.
Divide dough into 12 -16 equal pieces. This will depend on the size you want for the finished bun. Shape into smooth balls, flatten slightly, and place on a silpat covered baking sheet.
Let rise for 30 to 35 minutes. When buns have almost doubled bake at 400 degrees for 10 to 12 minutes.
If you are making hot dog buns I find it easiest to roll the dough out into a large rectangle and cut into smaller rectangles. Let rise with sides touching.

You can brush the tops with egg wash and sprinkle with poppy seeds, sesame seeds, coarse sea salt, or whatever you like. You can add dry onion soup mix for onion rolls. These are very versatile!
Makes 12-16

gift shows, family, haiti oh my!

So being in Seattle has been hectic so far! I was a little bum till last thursday due to getting acquianted (spell check??) and waiting for my desk and computer set up at my office job. I went and bought homey stuff to get settled into my new area. I have really loved it out here. I’m still trying to get used to the weather but its actually not that bad and the sun has come up a little. This weekend some of my other cousins kids came and it was nice. We went to a gift show which is the ultimate for shoppers. All I bought was a necklace that I hand picked all the little charms and they put it together for me. We still haven’t tried making menudo but when we do I want to post pictures and such. I’m pretty sure it will be funny ! I miss home but I like it here. One of my uncles is very sick so its hard to be away when everyone is worrying about him.
So I’m sure someone has heard that another survivor in haiti has been found in the rubble yesterday. They don’t know if he is from the initial quake or an aftershock. All of that is very sad and when I watch the news I have to look away sometimes. I bought a shirt that will give proceeds to haiti but I feel like I should do more. One of my cousins will be down there in about a week to help clean up. Its horrible to hear people on the news talk about their family members that are still missing. So here’s to a prayer in haiti.

Soooo i’ve been in town for two whole days now …

Fun! I love it so far. I’ve already visited downtown. I ate the ‘best’ teriyaki! and it was yuuum. Today I had lunch at the posh Boka downtown. Had the Salmon Tacos and it was delish. Today I finished unpacking and realized I brought so mch but not nearly enough haha.

My cousin and I are attempting to make Menudo on Saturday Night for Sunday morning and I hope to post about it, wish me luck.

harlingen airport blues ….

Today, I fly out to Seattle. But i’ve been in Harlingen since 11 am and my flight was pushed back to 5pm! I’m just so tired. I packed all my life within the 10 hours before I was scheduled for take off. I haven’t slept and I can’t sleep on this plane because it is only an hour long. I plan to sleep on the plane from Houston to Seattle. I am taking a Benadryl and knocking out Hello Seattle!

shopping woes …

So the store I work at look likes crap.

Seriously, all the holiday shopping has turned the store into depleted madness. And it takes forever to clean up !!Even with it being a few days after christmas, the shoppers have not stopped as forecasted. I love to shop and i’m more than thrilled to buy things I need for my big move. BUUUTTT, I am in need of clothes for cold weather. Something, Anything to warm me up in the Washington weather. EVERY store is full of crap that I don’t need. And it’s all mixed up. The sweater I want is either in a XXL or an XS. No thanks!!

So, if your from the Valley you are familiar with the families from deeep Mexico that are here during their winter break to stock up on a years worth of Abercrombie, Hollister, AE, Victoria’s Secret, Gap and everything else. Sometimes they go home and sell it for triple the amount they paid for it. I saw a graphic tee that was marked $780 pesos and it sold for $19.50. There are even tour buses that bring people on a tour that goes to La Plaza Mall and the Outlets in Mercedes. And ok, my family is Mexican and they come and buy like the others. But some of these people are ruuuuude! and lets say i’m folding millions of shirts. Theres a stack of folded t’s and messed up t’s and the take one from the middle of my nice stack and mess up the whole stack when they could have just opened a previously messed up T!! lol common sense people! This is the reason I love working at night while customers are gone

So no warm and cozy clothes buying for me …

On the other hand, Texas’ economy has boomed lol
